Ingredients:
- 8 cups chopped seedless watermelon (about 6 pounds)
- 1/2 cup freshly squeezed lime juice (about 4 limes)
- 2 tablespoons sugar, plus 2 tablespoons more, if needed
- 1/2 cup vodka, (optional)
- Mint leaves
Directions:
- Working in batches, puree in blender watermelon with lime juice and sugar until smooth. Add more sugar, if needed.
- Transfer puree to a pitcher; add vodka, if desired. Cover; chill until ready to serve.
- Stir; pour into tumblers, over ice. Garnish with mint.

Looks tasty! I'll have to pass on the vodka, though. Not allowed to drink with autoimmune diseases :( I bet it is just as good without the vodka! At least that is what I keep telling myself! Hahahaa!

I love all your watermelon posts! There is no more perfect refreshment than an ice cold watermelon on a hot, humid summer day and we get plenty of those!
This sounds so good and I bet it would be wonderful mixed into a pitcher of lemonade too. With the vodka, of course!
